Hi, here are some tips for when grilling steaks....
1) I always take the steaks out of the fridge and let them sit at room temperature for at least one hour. That way, they cook more evenly than when they're cold.
2) Do not poke your meat when seasoning or marinading, the juices will drain out during cooking.
3) When grilling, I always sear the outsides at high heat. Then I lower the temp and cook to desired doneness, Searing helps lock in the juices.
4) Finally, let your steaks rest a few minutes before serving. Once again, because if you cut into them too soon, the juices will run out.
